Easy Crockpot Chocolate Peanut Clusters
Peanut clusters are a perfect recipe to try during the holidays and they make excellent last-minute gifts. You would relish the idea of chocolates cooking over the stove or a slow cooker in the festive season. How many times do we have little ones wanting to get into the kitchen to help us with the holiday treats as we dissuade them from doing that fearing the mess and safety issues? Peanut Clusters Recipe
Ingredients
- 2 lbs white chocolate melts or almond bark
- 21 oz semisweet chocolate chips
- 14 oz milk chocolate chips
- 26 oz unsalted or dry roasted peanuts
Instructions
- Line 3 large baking sheets with parchment paper.
- Spray a 6 quart (6-liter) bowl of a slow cooker with non-stick cooking oil. Alternatively, you can use a liner.
- Put all the ingredients inside and cover and cook in low for 1-2 hours or until the chocolate is fully melted. [N.B. You should stir occasionally, every 20-30 minutes or so, to prevent the chocolate at the bottom of the cooker bowl from burning]
- Stir well to combine
- Drop the mixture in dollops with a metal spoon or cookie scoop onto the prepared baking sheets.
- Refrigerate for about 1 hour or until the clusters are set.
Tips
- You can swap the semisweet and milk chocolate chips with dark chocolate chips if that’s what you like more. As you can see, we have made it a little more kid-friendly here. Also, that way, you are switching to a more hassle-free 3 ingredient peanut cluster recipe.
- We have kept the recipe healthy by using unsalted peanuts, but if you like a hint of saltiness in your peanut clusters, you are welcome to replace half of the peanuts used above with the salted ones.
The dish lasts best, as long as 5-6 months, when kept refrigerated in an airtight container. Keep the different layers separated with pieces of parchment paper so that they don’t stick to each other. However, they can lose some of their crunchiness when stored for so long. Don’t forget to thaw them before consumption.
