S’mores Bars: An Easy Summer Recipe

S’mores Bar Recipe

When playing host, delight your guests with scrumptious s’mores bars that are chocolate, marshmallow and peanut butter sandwiched between layers of graham cookie crust. Believe us, the only thing you need to make from scratch here is the graham cookie dough. The rest is only stacking the layers.

Ingredients
  

  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1¼  cup flour
  • 1 tsp salt
  • 6 graham crackers, crushed into crumbs
  • 2 4 oz chocolate bars (the extra-large, extra-thick size)
  • 1/2 cup peanut butter
  • 7 oz jar of marshmallow creme

Instructions
 

  • Combine the butter and both the sugars. Beat with an electric hand mixer until the mixture becomes light and fluffy.
  • Beat in the egg and vanilla until smooth
  • Mix in the baking powder, flour and salt
  • Stir in the graham cracker crumbs
  • Line an 8×8 baking dish with parchment paper and press half of the graham cracker mixture into its base
  • Place a single layer of chocolate bars on top
  • Now spread an even layer of peanut butter and top it off with a layer of marshmallow creme
  • Spread the remaining graham cracker dough at the top
  • Bake in an oven preheated to 350°F or 180°C for 30 minutes till the top becomes golden brown
  • Let it cool completely before cutting it into bars to serve

Ideas

  • If you find gooey stuff a little hard to eat or want the bars to be clean at the edges, you can chill the baking dish overnight before cutting the bars.
  • Give the recipe a nutty twist by using chocolate bars with nuts instead of the plain variety
  • Endow the dessert with extra crunch by adding ¼ cup of finely chopped pecans to the crushed graham crackers
  • Sprinkle raisins over the graham cookie crust before adding the chocolate

Leftovers can be stored in a sealed container in the refrigerator for up to a week. The snack is perfect for carrying to a potluck or a lake for a cabin weekend. I had once baked it for a friend who just had a baby and she completely forgot that the little one needed her attention as she was busy indulging in the unique blend of creaminess and crunchiness of the s’mores bars!
